꼬리곰탕에서 건진 큰 꼬리뼈에 양념장을 뿌려 먹는 맛, 한국인이라면 반하지 않을 수 없다. 송원섭 기자 소 꼬리 국물을 좋아하는 것은 한국인만이 아닙니다. 영국에서 비롯된 옥스테일 수프는 서구 여러 나라에서 즐기는 별미입니다.
몇해 전 스페인에서도 한국의 꼬리곰탕과 비슷한 음식을 먹어본 적이 있습니다. 마드리드 지방의 전통 음식인 코시도 마드릴레뇨라는 음식입니다. 소 꼬리를 주원료로 거기에 닭 다리, 삼겹살 덩어리까지 추가해 같이 푹 끓인 국물인데, 소면같이 가느다란 파스타까지 들어 있어 제대로 꼬리곰탕 맛이 나더군요. 이 코시도는 본래 서민의 음식에서 시작되었다고 합니다.
투우 경기가 끝나고 죽은 소를 해체하면 살코기와 좋은 부위는 귀족들이 가져가고 꼬리와 다리, 내장 등이 가난한 백성의 몫이었다는군요. 이 남은 재료 중 꼬리를 삶아 먹으면 맛있다는 것을 서민들이 먼저 알아차렸고, 뒤늦게 귀족들도 그 맛을 알게 되면서 마드리드를 대표하는 음식이 되었다는 것입니다. 소 꼬리가 주 원료인 마드리드의 국물 '코시도 마드렐레뇨'. 글자 그대로 '마드리드의 탕'이라는 뜻이다.
송원섭 기자 워낙 소와 관련된 모든 것을 즐겨 먹었던 우리 조상들은 일찌감치 꼬리의 가치를 알아봤습니다. 설렁탕, 곰탕, 도가니탕, 갈비탕, 족탕 등 수많은 소 재료의 국물이 있지만, 그중에서 무엇이 가장 고급인지는 이미 정해져 있습니다. 바로 꼬리곰탕이죠. 대체 꼬리곰탕은 무엇이 그렇게 특별한 것일까요.
한여름이 되면 뜨거운 탕은 매출이 떨어지지만, 본래 귀한 손님을 대접하는 보양식인 꼬리곰탕은 기온이 올라가도 계속 찾는다고들 합니다. 그 꼬리곰탕 명가 하나를 찾아갔습니다. 1950년 개업. 3대 째에서 100년을 채우겠다고 기염을 토하는 시장 맛집입니다. 참고로 이 식당은 분명히 손꼽히는 ‘꼬리곰탕’ 전문점인데, 이 식당에서 손님도, 업주도 최고라고 인정하는 음식은 ‘꼬리곰탕’이 아닙니다. 그럼 대체 뭘까요. 에서 알려드리겠습니다.
